Hi
This
is the drink that I grew up with and now it has become my family favourite
drink.
When I got to know
that the Pandan is the theme for September Little Thumbs Up, the first thing
that came to my mind was this Pandan Grass Ice Jelly and I told myself I wouldn’t
want to miss it.
My mum taught me
how to do this drink. I remember she told
me that grass jelly 仙草
has the properties of releasing heartiness from body and relieve stomach
disorders.
She said to
include Pandan leaves because the Pandan fragrance will cause the grass jelly
to turn into a flavourful and refreshing drink that best consumed during a hot
weather or after strenuous sport training.
I
have recorded every step that she taught me and here you go the recipe.
Try it out!
INGREDIENTS
1
pkt (480g) Grass Jelly (仙草)cut into cubes
4 pcs Pandan leave tie a knot
1 litre Water
3 big Rock
Sugar (the sweetness will depend on
individual liking)
METHOD
(1)In a
pot, bring water, rock sugar and pandan to boil. The longer you boil, the thicker the syrup
will be when it is cooled. For me, I
boiled until bubbles is formed.
(2)Remove
the pot from the heat, discard the pandan leave and let the syrup cool down in
room temperature. When it is cooled,
pour into the jar and refrigerate.
(3)Cut
the grass jelly into cubes. In a clear
glass, scoop 3-4 tbsp of grass jelly into it.
Add ice cubes and the pandan syrup to the amount you desire. Top up water, stir it and Enjoy!
