Steam Salmon with Chilli Garlic Salsa

After so much excitement about the Double-bake London Cheesecake on a Sunday afternoon and now I’m moving on to a dinner dish which I cooked on same day.

This dish is adapted from a cookbook Chef at Home – a taste of goodness.  It was a Christmas present from Susanna, a good friend of mine, whom I have known for 30 over years.  She was my secondary school buddy.
 I’m fond of exploring various ways to cook salmon because my family loves salmon very much
This is a very quick, healthy and delicious dish.  The flavour from the garlic and chilli compliment the fish so well.  Salmon is a good source of omega 3 fatty acids.  The chilli-garlic mixture enhances the taste of the steamed fish and makes for a healthy low fat dish.

INGREDIENTS
300g salmon steak (I used 400g)
300g cod steak (I skipped this)
1 tsp seasame oil
1 tsp corn starch
Salt and pepper to taste
2 fresh red chillies, seeded and chopped
4 cloves garlic, minced
2 tbsp olive oil
2 sprigs of coriander and mint, chopped to garnish

METHOD
(1)Cut salmon and cod into large cubes (about 3 cm)

(2)Marinate with sesame oil, corn starch, salt and pepper; season for 10mins.

(3)Heat olive oil and gently fry garlic and chilli; do not brown.  Set aside.

(4)Place fish cubes in a deep dish for steaming; spoon the chilli-garlic mixture over the fish.

(5)Steam over high heat for 5mins.

(6)Dish on serving plate and garnish.

  1. Cooking fish is never my forte and I doubt it ever will, just can't get it right somehow...just have to do without fish in the house lol! Your fish certainly looks healthy!

    My family loves salmon, though I have never tried steaming it before. This looks delicious and so perfect with a bowl of steamed rice! Thanks for sharing with CYB!
